How are we almost already in mid-February?? Time is just flying on by! Guess it is time for my January recap. Things are progressing with the wedding planning, and many house projects have been started. I think we might have started one or 10 too many projects at once 
but that sounds like me!
January 5th- Got my wedding dress! Sorry but no photos will be posted of it until after the wedding. But I am super excited about it. Also wedding related we booked the caterer, DJ, Photographer, and got some centerpieces (thanks to my parents) painted!
January 17th- Started School! Yup, Ryan and I both got into the SDSU MBA program and started taking classes now that will count toward our degree. But we officially start the program this Fall. So weird to be a student again, but also super exciting.
Also monumental last month, we taught our rats how to do tricks! Oh and yes if you didn’t already know, we have pet rats. We are weird and that’s that. Click for the video.
We even managed to find some time to go wine tasting with my parents in the desert.
And bought a ton of stuff for our gardening project! Our car looks like this often nowadays. PS Check out that giant costco bag of spinach 
I am sure I am missing about 100 other things that we did in January, but this sums some of it up.
I have been failing to write about food, but I promise I have been eating and cooking up a storm! I actually signed up for a challenge at work and have been trying really hard to eat very clean/healthy. The last 3 weeks I’ve had at least 1-2 salads a day! I will leave you with a picture of a salad I recently ate (a little too dressing heavy..oops). I also have an experiment brewing in the kitchen, Injera (fermented teff bread, an Ethiopian bread), which I am going to go try right now! I’ll have to update on that and the house gardening projects over the weekend!
